The rank smell that wafts from most butcher shops is less apparent here, and there are few flies. They must run a fairly clean operation. A board out front shows the animals on offer today with an artful arrangement of severed heads: a chicken, a goose, a duck, a pig, a lamb, and the tiny head of what must be a pigeon.
